Recently my company, Skotidakis TM,  was accepted into a major dairy program administered by the Canadian Dairy Commission (the CDC). 

Over the next 3 years this program will prove especially beneficial our company .

In helping us secure our spot in the CDC program, Peter’s assistance and expertise was invaluable. He arranged for independent lab testing of a new and innovative product we had developed. He then used our product for baking in his own test lab. Lastly, he wrote a detailed 36-page report, that we presented before a panel of dairy stakeholders who act as a selection committee for program admission. Ultimately his report proved to be a key part of Skotidakis’ successful admission.


Accordingly, I have no hesitation recommending him.

I have had the opportunity to work with Peter Jacobs for over 25 years. On numerous occasions, Peter’s baking expertise was called upon to assist with Le Bon Croissant’s commercial baking operation.  Peter’s baking knowledge and resourcefulness helped with product development, troubleshooting, creating process flows, reducing inefficiencies, sourcing different ingredients, and so much more.    

For example, Peter used his technical data logging knowledge to help improve the quality of our baked goods, identifying hot/cold spots, under/over baking, moisture loss, analyzing timing, etc. 

Peter is a phenomenal individual.  He is kind, reliable, easy to work with, attentive, committed, and passionate about all things baking.
